Baked beans with andouille

This dish doesn’t photograph well.  But trust me, it’s delicious.

Our neighbor suggested making this when we were having trouble coming up with a use for andouille besides gumbo.  It’s basically the fanciest beanie-weenie you will see.

Beans are yellow eye, from Rancho Gordo.  They are kind of silly expensive for beans, but we order large quantities at a time because they have a flat rate for shipping – and because they are SO DAMN GOOD.  Seriously, a revelation.Yellow eye beans

Anyway.  This is how I make it (not really a recipe):

1 lb dried beans

One onion

3 or 4 cloves of garlic



1 bay leaf

Chipotle or ancho chili powder

1 lb andouille (or other smoky sausage)

Soak and cook beans according to package directions.

Add additional ingredients to pot and simmer another hour or two.

Serve over rice or garlic mashed potatoes.Over mashed potatoes
