Baked Cucumbers (Concombres au Beurre)

I would never have thought to bake, or even cook, a cucumber if it wasn’t for Julie Powell.  Her book mentions that they are a revelation, and now that I have the book, I feel this compulsion to try it.

Also, we have many many many cucumbers.

The recipe calls for 6 cucumbers about 8 inches long – I only used two.   They were monstrous though.

Cut into strips for the prep (you soak them in a bit of wine vinegar, salt, and a tiny bit of sugar for 30 minutes to several hours, then drain).

And the finished dish – baked in 3 Tb melted butter with some scallions, basil, and pepper on top.

They really are a revelation.  Tender and buttery and herby and just TASTY.  I will definitely make them again.
