Chicken Tortilla Soup

Yes, this is made in a crock pot slow cooker.
No, it does not suck. Nor does it contain canned cream of anything soup.
Chicken Tortilla Soup
2 chicken breasts (frozen is fine)
1 can diced tomatoes with chilis (I use Ro-tel brand, do not drain)
1 can diced tomatoes (do not drain), or about 3 medium tomatoes
1 can pinto beans (drained and rinsed), or about 1.5 cups pre-cooked dried beans
2 cups corn (I usually use frozen)
2 cups chicken stock, broth, or water
1 TB chili powder
1 tsp ground cumin
1/4 tsp salt
Good pinch of cinnamon
1/2 tsp dried chipotle
Oregano
A few grinds of black pepper
Put everything in a slow cooker. Cook on low for ~8 or 9 hours, or until chicken is cooked. Shred chicken.
Serve with tortilla chips on top. If you like sour cream and/or avocados, those would be good too – we just never have them around.

That looks like a good early fall dish: I think I’ve found my gameday cooking project…I will be foregoing the “slow cooker” though 😉
