Pasta with Roasted Tomato Sauce

The garden is done.


I used some of the last few tomatoes to make a pasta sauce, for a dish to bring to a dinner last night.  We did the Race for the Cure today, so we needed pasta.

Right?  Right.

I basically used this recipe – I put the oven at 250F instead of 225, since I was using full-sized tomatoes instead of cherries, and added a sprig of oregano to each halved tomato.  Before baking:




I sauteed an onion and some garlic in olive oil, added some tomato paste and the roasted tomatoes, and simmered for 30 minutes.


Over some pasta, finished with a bit of basil and some asiago cheese, it was good stuff.
