Everybody hates me

Guess I’ll go eat worms!

Long thin slimy ones, short fat juicy ones –

Itsy bitsy slimy wimy worms!

Last week was one of those weeks.  Those weeks that make you want to run screaming into the street and drink yourself stupid and then go off to a small island to sleep for a week.  If I have to choose one of the above, I would like the island.  Also a pretty cabana boy.  It doesn’t help that the weather is incredibly dreary – the snow is gone but dammit, I need some SUN!

Weeks like last week call for comfort food.  Preferably comfort food that is easy to make.

Hainanese Chicken & Rice, based on Mark Bittman’s recipe that was published in the New York Times.

Serves 4 to 6

Salt and freshly ground pepper

1 whole (3- to 4-pound) chicken, trimmed of excess fat – frozen is fine

Several cloves smashed garlic, plus 1 teaspoon minced garlic

Several slices fresh ginger, plus 1 tablespoon minced ginger

0.25 cup vegetable oil

3 shallots, roughly chopped, or a small onion

2 cups white rice

0.5 cup minced scallions

2 cucumbers, peeled and sliced

2 tomatoes, sliced

Chopped fresh cilantro leaves

1 TB sesame oil

1. Add chicken, sliced ginger, smashed garlic cloves, and 4 to 6 cups of water (chicken should be about halfway submerged) to a 6-quart slow cooker.  Cook on low for 6 to 8 hours, or until chicken is cooked through and meat is falling away from the bone.

This chicken was frozen solid when we put it in the slow cooker, and it was literally falling apart 7 hours later. Also, it is really hard to take a good-looking photo of a raw chicken bobbing in water with sliced ginger.

2. Remove chicken from the slow cooker.  Strain and reserve stock, and let bird cool to room temperature. Put the vegetable oil in a high-sided skillet or decent sized saucepan over medium heat. When oil is hot, add remaining garlic, along with shallots; cook, stirring occasionally, until lightly browned, about 5 minutes. Add rice and cook, stirring, until glossy. Add 4 cups reserved chicken stock and bring to a boil, then reduce heat to low and cover; cook for about 20 minutes, until rice has absorbed all liquid. Stir in salt and pepper to taste.

3. Shred or chop chicken, discarding skin. Combine with rice, scallions, and cilantro.

I totally forgot about cilantro.  Top with a couple slices of tomato and some sliced cucumber – drizzle sesame oil over the top of each dish.

I also like to add a little bit of sriracha or chili-garlic sauce on top.
