GF for LF – days 4 and 5

Better.  I figured out some breakfast!

Tuesday:

Breakfast:  already cooked brown rice, 1 TB pure maple syrup, 0.25 C milk, nuked like oatmeal.  Yum!

Lunch:  leftover kung pao tofu, brown rice, salad, Asian ginger vinaigrette

Dinner:  shepherd’s pie – ground beef, pearl onions, carrots, peas, bit of cheese, ketchup & Worchestershire sauce topped with mashed potatoes and baked.  Inspired by this recipe.

Worchestershire sauce is GF!  Also so are most brands of fish sauce, apparently.

Wednesday:

Breakfast:  um, nothing but coffee.  Need to make another batch of brown rice.

Lunch:  leftover burger from Sunday night, leftover mashed potatoes from last night, salad, Archer Farms balsamic vinaigrette.

Dinner:  sauteed scallops, Parmesan polenta, sauteed Swiss chard, truffle oil.

It’s getting easier, or I’m getting better at it. Need to make a Trader Joe’s run and get some GF granola and bread.
