The week to come

We’re expecting another busy week, so I cooked quite a few things today again.  Also, we’ve got quite a few super-easy meals planned to help us push through.

And some things we didn’t end up eating last week… Oh well, makes this week easier.

  • Mapo tofu + rice
  • Chicken enchiladas
  • Pasta w/Italian sausage + spinach
  • Hummus wraps + salad (we did eat these last week, but it was such a hit we’re bringing it back)
  • Pancakes & eggs (Shrove Tuesday IS this week…)
  • Brunswick stew (which can apparently be made with squirrel meat?  We just used chicken.  I’m not that daring.)

We had the pasta tonight – we used another jar of sauce from our dwindling stash of garden-canned tomato sauce.  So sad.

Mixed with a pound of steamed spinach, half a pound of Italian sausage, some red pepper flakes, and some fennel seeds.

This shape of pasta is apparently called “campanelle.”

We added the sauce to a pound of cooked pasta, topped with some cheese and baked for about 30 minutes.

And it was yummy and delicious.  The end.
