A week of leftovers

I was in Kansas City all weekend, and Pork-A-Palooza is coming up next Saturday – so I’m trying to minimize the amount of cooking we have to do this week.

Did you hear about Pork-A-Palooza?  You should come if you’re in Omaha.

It’s going to be AWESOME.  But there is a lot to be done, and also sometime next Saturday I also have to run 8 miles.

So this week:

Meatball sandwiches (frozen meatballs, home-canned sauce), roasted asparagus

Shrimp & green bean soba noodles

Chicken enchiladas (from the freezer)

Quiche Lorraine (from the freezer), salad

Mapo tofu + rice

Grilled cheese (or maybe quesadillas?) + tomato soup

And that will be that.  I hope to see many of you at Jake’s next Saturday!
